Jerk Chicken Chowder:[glow=red,2,300][HOT][/glow] My own recipe inspired by a dish of the same name from Sammy J. Peppers (they've since removed this item from their menu). It's a cream based soup with no potatoes unless you want them; so technically it's not a "chowder". It's a simple dish to add some spice to an afternoon lunch or as an appetizer. - 1 Boneless, skinless chicken breast [cut into small pieces]
- 3 to 4 tbsp Caribbean Jerk Marinade (or your own home made variety]
- 4 to 5 white mushrooms [sliced]
- 1 Birds Eye Pepper
- 2 Cans Cream of Chicken Soup [Low Fat]
- 2 Can fulls of water (as prescribed by the soup)
Cut chicken into small pieces and place in mixing bowl with the jerk marinade and let sit for 5-10 minutes. Prepare Cream of Chicken soup as directed on the can. Add to soup sliced mushrooms and diced Bird's Eye pepper [seeds optional, VERY HOT WITH SEEDS!] Cook chicken in skillet until thouroughly cooked and excess marinade has reduced. Crumble chicken with spatula as you are cooking it. Add chicken to the soup pot. Let simmer 10-20 minutes. Enjoy. [CAUTION: Do not rub eyes or pick nose after handling the Bird's Eye Pepper... OUCH!]
